The better braking performance comes mainly from the bigger rotor.

From what I've researched, the biggest difference in the C5 upgrade is the larger rotor. The LS1 caliper actually has a stronger clamping force due to having larger pistons than the C5's, however the C5 calipers are pressure cast and resist spreading under heavy stress whereas the LS1's are gravity cast which isn't quite as strong. You can use LS1 calipers with C5 rotors with a bracket made by LG that doesn't require any spindle modication allowing you to go back to stock. As mentioned it does move the stock braking bias toward the front giving more front end dive with stock suspension.
