I'm following a thread on Fbody Empire and then found this thread too since I'm thinking about pulling the trigger on these calipers too. My car's a 93 and am using the UMI C5 caliper adapter brackets with C5 vetted brakes now. Do I hog out those caliper mounting holes for the V's caliper bolts or do I actually need the ls style /98-02 spindles?

You'll need the 98-02 spindles. Just go to a junkyard and pick up a pair, should be pretty cheap.
