I did on my old lt1 car because I bought a used 9 inch that didn't have provisions. Aside from the inop light on the dash, I never noticed it missing. I think you can pull a pin and turn the inop light off too.

Deleting ABS is very common.
In fact, there are more reasons to delete it then keep it. We've got a variety of kits to do just that...if you search, you'll find quite a bit of discussion regarding it.
It is better when removing ABS to allow controllability through a proportioning valve...which our kits all utilize.
1) Lose weight
2) Less cost involved with rear-end purchase
3) Clean up engine bay
4) Increase air flow decreasing engine bay heat
5) Better clearance for supercharged/turbo setups
6) Diminish troubleshooting issues with problematic ABS
7) Eliminate constant issues with different sized tire combos
8) Allow controllability of brake bias with adjustable proportioning valve
9) Removes issues of ABS/TCS activating when you don't want it to
10) Puts the driver in control of his/her braking
