make sure you sync to backup your phone before you do this.
Also I believe if you put it into UDF mode (update firmware) it completly erases the phone/jailbreak/unlock, if you have something the shitty warrenty will cover
search SMS Mario on cydia after you install winterboard, winterboard is a must have to change the tones, slider, lockscreens etc. Most of the SMS sounds replace the "chime" tone, so to change it you need to select chime in the normal settings menu.

OP, the simplest way I have found, is to simply download a custom firmware from modmyi, they have several to chose from. Once downloaded, in Itunes click Shift+Restore and select the CFW you downloaded, it will install it and you are done. I havent personally tried the blackra1n, but am getting a 3GS tonight and may have to use it depending on the FW installed on it. Hopefully Ill get lucky with some 3.0.X FW.
If you want I would do it for you, but I am not close, I am on the W side of Houston. I do all the hacking on my friends iPhones.
