Default Favorite mexican food recipes ?

hey guys, i was just watching my gf finish up getting her pibil(i think its pork butt for those who dont know)ready to go in the oven. its one of my absolute favs, and she has some great recipes for 2-3 different kinds of chicken enchiladas( one with cilantro and green sauce, another with i think sour cream or cream cheese). anyway, id really like to hear what some of you other guys' favorites are? maybe trade recipes? to me theres not much better than some awesome food... lets hear it ?

oh and carnitas rock if someone knows how to make it...

Im Hispanic so this isnt fair, but I fucken love Taquitos Rojos, they are basically red dough tortillas and gorditas filled with stringed beef in the gorditas and chesse and refried beans in the flauta style tacos. I've never seen them for sale in a restaruant because it's to time consuming and some what difficult to make but it's considered 100% mexican food that hasnt been discovered by our Anglo friends it's one of the our last culinary treasures..lol, I also love Barbacoa de Borrego, translation, Lamb on the Spit or Grill cooked wrpaped in aluminnum foil. El Hidalgense Restaurant has some really good lamb barbeQ, but there restaruant is in a ghetto *** location.

I love Guacamole and tacos (barbacoa, chorizo, pastor), great Mexican food.

Ever heard of "Tacos de Trompo"??? Man!!!! Those are the best!!!! It involves two types of meat, pork and beef, slowly cooked with charcoal in a weird device that gets spinned as it cooks, its specially season with a red chile powder that gives the meat a red color. It is served in white floor tortillas, chopped onions and cilantro, green tomato salsa and a touch of limon, many add white cheese and slices of pine apple to it.

in general, i'd say tamales are my fav. i like 'real' mexican recipies too, but i like getting the tamales from central market, i can eat like 9 myself. someday i will learn how to actually make them.

Tostito's, canned refried beans, shredded cheese, and some sour cream!!

Actually, I love some fresh fajitas, not usually from restaraunts but home cooked on the pit.

My son likes cheese enchiladas and the green sauce from Casa Ole. I know its not really mexican food but close enough for a white boy!
