If you search the forum, you should find a ton of threads on engine pulling. I pulled the engine and M6 trans with a chain running from the front of the driver's side head, to the back of the passenger's side head. But like robert said, a leveler is handy.
In any case, you'll want some fairly tall jackstands to go under the front of the car. If you are pulling the trans attached to the engine, it helps alot to have the front of the car way higher than the rear. I'd also recommend taking your hood off right away. I know some people have pulled the motor with the hood on, it's only 4 fasteners (2 on each side that go up into the hood). With 1 person helping, the hood goes on and off pretty easy. It's also nice having the hood out of the way when you are reaching the bolts at the back of the motor. Climbing around in the engine bay with the hood latch taking chunks out of the back of your head is no fun!
