I think its how hard it sets. Red will set hard and is for screws you arent likely to remove.
Blue sets softer and is easier to remove if needed.
There is also a green. Used for industrial mainly, that one is almost like welding the screw in there.

The green loctite is actually a penetrating solution that you can put on bolts that have already been tightened. It is alot thinner than the others and allows it to get in there with the parts already in place.

There is at least 10 different kinds of red loctite.
I used different numbers of red loctite for what the job requires.
examples are #271=strong #262=strong but weaker then 271.
