Early LS engines burn the most oil & they have the notorious piston slap when cold.
Engineers at GM changed the PCV Design on later LS1 engines & this Decreased Oil Comsumption on Later LS1 engines.
The guys at Competition GT in Costa mesa are way cool & they can diagnois your Gauge problem very quickly. They would probably attach a mechanical oil pressure gauge to your block & check your Oil pressure. You might have a bad sending unit or a bad gauge. Worst case it could be your oil pump. I would not drive the car until you get it checked out. You dont wanna damage your engine.
The guys at Comp GT Do Awesome work & Tuning. They have a great Dyno.

LS1's are known to use at least a quart of oil every 3k miles, some burn oil quicker and some slower, you may be losing some oil past the valve seals. The gauge bouncing around, how so? When you idle do you see at least 20 psi? Does the gauge read higher than 80 psi when wide open throttle?

Hit up Gene Jones Racing - 714 650 0042. They're in La Habra - straight shot up beach to imperial. If its fbody, you go to Gene. VERY reasonable on the prices and the work is second to none.
