My money is on the thermostat sticking
easy fix
happens to a lot of people when the thermostat goes south... they turn on their AC and the car starts overheating...

does this happen standing still or cruising? both?
does the needle ever max out on the guage, or slowly creeps?
make sure the fans are coming on as well as pulling the right way....
unless its a 98, the water temp. guage in the cluster isnt accurate...but if the needle is moving past the point where it usually sits, there is an issue...
make sure nothing is obstructing the path of airflow to the radiator...
also make sure there is enough coolant in the system....
if you ask me, its probably your thermostat sticking...after the fans, id start there.

even though it's new, and a 160... i wouldn't necassarilly disreguard it... it could be defective, or gunked up... how's the crappy dexcool stuff doing in your cooling system... gunked up yet? when I did my radiator swap i got rid of that stuff... put in some nice yellow/green Prestone extended performance... MUCH BETTER

if your stock one was still working when you took it out, id suggest putting it back in...
just because a part is new doesnt mean its good...
you can get away with the 160 thermo when its not so hot outside, but the stock cooling system has a hard time keeping up with a 160 in hot weather.

you just added a cooling system component to your vehicle and now it is overheating with A/C on in hot weather...
