For the 9.5 in. fronts you will be somewhere around 50mm offset.
For the rear 10.5 in. wheel you're probably going to want something around 55mm offset.
When they talk about poke, they are talking about how much further your wheel will stick out than your current setup
Offset for 19” wheels isn’t going to be any different than one would run on 18’s, 17’s. Etc.

which would give you in those widths
19x9.5 +35mm

If you want similar fitment. I don’t think you can go any lower than this for outside edge fitment. So basically no number lower than these will give you desired fitment on the outside. Any larger number will move the wheel inbound that amount. for example. A 19x9.5 with a 40mm offset will move the wheel 5 mm toward the center of the car.
