For the 17x9.5 and 18x10.5 combo, the tires that will retain stock heights are 275/40-17 front and 275/35-18 rear.
A 285/40-17 tire would also fit the front, and a 285/35-18 tire would fit the rear.
295s and 315s will fit in the rear, but watch the heights, because a 315/35-18 tire is 1 full inch taller than stock. You'll maybe have to roll the fender lips and/or bang in the inner well a bit (probably not with 295s). Not too uncommon with 315s on the rears.

For a lowered application, and you want 315s out back on 18 inch rims, I'd go with a 315/30-18 tire. It'll end up about 1/4 inch shorter than stock, and you shouldn't have any problems even with being lowered. Again...may have to roll the fender lips and/or bang in the inner well a bit.
As far as the fronts, 275/40-17 would retain stock tire height, but may want to consider a 265/40-17 to equal the height of the rear tires.

Octane pretty much summed it up
if ya wanna do some more research, check out:
Tire Size Calculator
This is how i learned what size to go with, when i went with C5 "Mallet's". It helped out alot, even though i decided to use the factory C5 size tires on my 98 Z28.

On the rims you want, i would suggest running 275/40/17 for the front and 295/35/18 on the rear
this way it will only be .4 taller in the rear, so it wont look too weird.

then go to the TireRack to see what brand tires you can get in whatever size you choose.

I have 18x9.5 ZO6's up front and 18x10.5 out back. For the rear, I went with 295/35-18 BFG Comp TA's from Tirerack for $260 each on clearance. The tires fit perfectly and look great on the rim. They don't go inside the rim or stick out. They are not much less wide than a 315 too because they are mounted on a 10.5 inch rim. I think you will be very satisfied with them. Go with a 265/40, 275/40 or a 285/35 in the front. Do the BFG KDW's. There cheaper than some, look great, wear great, do great in the rain and handle awesome. If I could do it again, I would have went with a 285/35/18 in the front. I went with a 265/35/18 and the tire is a little too narrow for that wide of a rim. The main thing that hurt me was the 265/35 had a much lower profile than the rears. Therefore, I had an inch more fendergap up front and it looked like a boat skimming the water. I was going to go with aftermarket springs but even with them, I still would have had more fendergap up front, just lower all around. So ultimately, I had to cut my springs to get the look that I wanted, a slope. The front sits really low and looks badass. I get a lot of compliments on the stance. Plus, the car still rides really close to stock and it handles better because it has a lower center of gravity. So I got the look that I wanted, kept a good ride without the harshness of lowering springs and it was free. Took me about five hours to lower the car and $60 for a custom alignment. Make sure you have a shop in your area that will allign lowered cars. A lot of places wont. I had to drive thirty miles to get it done. Anyway, good luck, I hope I helped.

I have 275/35/18's all around. I wish I had done 245 or 255 in front. The wide tires grip into all of the grooves in the gound -it seems like I always have to have my hands on the steering wheel because it will pull into uneven grooves on the road. I threw 245/45/17's on front from my dads vette for a day and the steering felt more effortless and nimble to me.

Your tires are over inflated . . . .

Tire sizes:

Front 17" x 9.5" use 275/40ZR17
Rear 18"x 10.5" use 295/35ZR18
