Ok. Can you reccomend a good kit. IIRC 4200K is the most beneficial and produces the most usable light, but I want to step up to 6000K, because I like a hint of blue.

Therefore, I would need 2 bi-xenon projectors, wires, 2 HID Ballasts, and a little fab work.

Hidplanet has those. head there, pick the HID link and then OEM. this will get you to the sales area of their site that has projector packages.

From what I can see, those kits are 4100K, and one of them is discontinued.

You took Nova5's suggestion too literal. Read around on HID Planet's Forums to find out what works best for your situation and buy the necessary components from a member on there or on ebay or Retrofit Source (avoid "replica" projectors, they aren't as good as the real thing -- replica clear lenses on the other hand usually are good). They have a sales section on there just like here.

Before you buy anything or spend any money. Read. Read. Read. Learn all you can. Read through the various threads on retrofits. Make sure you know what you are getting into. To possibly make things easier, see if there is already an aftermarket housing available for the Equinox that already has projectors. Typially the projectors are low quality halogen projectors. Sometimes you can fairly easily remove that low quality halogen projector and replace it with a good HID projector. Unfortunately I didn't see any such headlights for the Equinox on ebay. Alternatively, you can get a set of stock replacement headlights from ebay and do the retrofit into that set so that you can still drive your car while you take your time with the retrofit.
