LS1s do fit in Mustangs with minimal work! (pics)
My '86 Mustang was stock except for suspension, tires, much gutting, and a tubular k-member from AJE. I bought one with SBC motor mounts (I think I paid $300 for it), then I bought LS1 adapter plates.
The motor went in with minimal problems. The oil pan BARELY cleared, but it did clear. The 4L60E fit in the tranny tunnel. I will be making a crossmember sometime this week and having a driveshaft made. Amazingly enough the stock brake booster fits to the LS1's line, the stock Camaro radiator, fans, and hoses will work as well. The biggest issue so far seems to be header clearance to the steering rod on the driver's side, but the passenger side seems like a breeze.
I bought the motor (from a 2002 Z28 w/ 36k miles) Monday night and after a few hours of work on Tuesday it was in the Stang.
FWIW - this car will weigh about 2400-2500 lbs once complete due to some gutting to a stripped out Coupe, and should hook like a bastard.
My total investment for this project is right around $4000 including the Mustang itself, wheels, tires, suspension, Painless kit, motor, trans, and misc. crap. I hope to have it running with $5k invested. I call it "Project Blue Light Special" due to the small investment and the fact it used to be a cop car.
I took these pics with my phone so they aren't good quality. But here they are:

Let us know how that RX7 swap goes. I've been thinking about that one.

Ah, from Ireland31?
Im actually living in Santa Cruz at the moment, but my folks have a hangar down in Rosamond, so I am building the car in Rosamond.
Some guy was 100% sure that he would ship me a motor last week, but the pig ****** has stood me up and not emailed or called in 6 days even though I have emailed him every day. His phone is "not talking outside calls at the suscribers request"
I have not sent him any money, but its back to the hunt for me after I was sure I found a deal finally
Maybe I could swing by your place some time to check out the projects? I come through bakersfield every time I drive south to work on the RX
Best of luck with the project!

The motor mount plates are Street and Performance plates, they go for like $80.
I was told hughes or transadapt or something carry a set of the same plates for $40 but i havent checked.
The k-member is from AJE racing. Its a normal bolt in tubular K member with chevy motor mounts. It was approx $360.

LS1Fox, cool conversion.
Hey,, That's a great sleeper. There's one more option that makes these cars look even more unsuspecting. You might already have it installed. Keep that real small 4cyl stock tail pipe, not hooked up, just peeking out from under the bumper. That helps your Wolf in sheeps clothing style. Well, only if your not running, say in a parking lot and people are walking around it.
People think my CJ5 has a 600lb 2bbl 304 3 speed. That was stock and most think a shifter **** tells what tranny you've got.
Good luck
