Go with the RX7 for a few reasons.
1) It is one of the best looking cars.
2) The cars actually have a resale value when you are done.
3) They have insane handling.
4) GREAT interiors.
Just be prepared that with choosing the RX7, you are looking at a 15-18k commitment if you are doing the work yourself.
6k for a shell(nice shell, doesn't need paint/interior work), 5k for engine/tranny/harness(have to modify harness: 500-1k is included in engine price), 2k for subframe(for engine complete engine swap. grannys-1300, hinson-2500 or so on prices), 800 for torque arm replacement(so you don't snap it on the street, it is VERY common), 5500 for procharger. Then there is rims, suspension, and the other miscellaneous things that you may do so probably another 2-3.5k.

What about an 86-87 Monte carlo SS? I just sold my 86, but i've always wondered how it would be with an LS1 in it

RX7 is funky but I really don't like the look of them that much and putting big power down in the is probably a PITA.
If I was going for lightweight I'd look at a classic British sports car (Triumph or similar) or a 32 Ford 5 window coupe.
