Overheating. HELP!

Overheating. HELP!
Just looking for some input guys, but here's the situation.
The other day on the way to work I stopped at a gas station for a drink. When I was leaving, all of the sudden my temp guage starts climbing rapidly. I was only a block from work, so I made it w/o the temp guage spiking (it was between 230-250 while cruising). My initial guess was fans.
Checked the fuse, it was ok. Checked the relays, I wasn't too sure so I replaced all 3 of them since I had an autozone in the parking lot where I work. When I left work that night everything was all good.
Drove the car yesterday, no issues whatsoever, the guage was @ 210 like it always is.
Today, I go to run some errands & notice the same problem I had the other day. I stop the car in a parking lot & run into the store to get some distilled water. I pull the resevoir cap and notice that the coolant is BARELY on the stick and what was on the stick was pretty gunked up. I added about half a gallon of distilled water and started the car up. The temp guage was now hovering back & forth between 210-230.
I get on the freeway to go home & the temp gauge is pegged @ 210. As I pull in my driveway, the needle starts climbing again.
So my next guess is t-stat (had a 160* one put on about 15K miles ago).
Anyone else have any suggestions before I go pulling **** off the car?

I had that problem last summer, ended up being a T-STAT. Hope you get it fixed.
I reprogrammed my fans to see if that may be the issue, but I think you're right, its going to end up being the t-stat.
