Default My Car is Acting Nutty

We are having some unusually cold wx here in FL and I decided to take a spin this morning to see how my car liked it. Well I just putt around until I get to operation temp and then get on it a little bit.

After I let out of the thorttle and shift to 5th gear my water temps drop all the way down and my car starts to stutter and buck. I put it in neutral and the revs are sitting at 2k for some odd reason.

Then the water temps jump back up to normal and everything is fine. This happens cyclically for about ten minutes, then the car just drives perfectly normally again.

Anybody have a clue as to what this could be?

It is the stock thermostat (180), while the cold does suck it is fun breaking the DR's loose at 60 mph.

Could possibly be your temp sensor? Or, it could be a sticky t-stat

Thanks guys, the problem hasn't reared its ugly face since so I am going to let it go and if it reoccurs start by changing the t-stat.
