Also how can i verify what t-stat i have .. I thought i had a 160 tuned but now im not so sure i do. My tuner set it to i think 170ish but wasnt sure if i had one or not..

Some water pumps come with the gaskets, if not get the ones from the dealer, great quality.
DO NOT run straight anti-freeze. 50/50 for a street car, it is not just anti-freeze it is designed to remove heat as well by providing a means for the heat to travel to the radiator from the engine block and heads.
Straight will actually make you run hotter than 50/50 or straight water. I put some Water Wetter in this last time because it was recommended by a few people I know, for about $8.50, I figured why not try it, a few degrees colder is always good.

What do you mean by tuned? A t-stat is a mechanical device that allow coolant to flow past it once the coolant reaches a specific temperature (easiest explanation). Unless someone physically changed it out, then you have a 195* stock one. Tuning cannot change when the stat opens and closes unless you mean the fans were tuned to match a specific stat.

Yea tune your fans to match t-stat opening if you go 160* I would stick 195personally if it still runs right around that temp as that is what GM designed it to run.
