Racing 41 is the better choice for the LS1. I've seen oil analysis results in the LS1 with Racing 41 and it does very well. Racing 21 is a bit too thin for hard use in this engine.

The oils I like for the LS1 are German Castrol 0w30, Castrol 5w40, Amsoil 5w40 and RP 41. Redline is also a good choice, but pricey. Mobil 1 5w40 is also pretty good. I'm not too keen on their 0w40 anymore since they reformulated, it doesn't seem to show as good wear numbers in the LS1 family of engines.
