10.72:1 you need to mill the heads more to get to 11:1
You could always mill the heads .020" and run a gm mls .051" gasket that would put you at 11:1

I'm trying to keep my quench area small as I can to resist detonation on pump gas, 93. So should I go with the .040 gasket an mill the heads the rest of the way or should I go with the .051 gasket and mill the rest, I been trying to read up on this but there's just too too many combos out there, I'll be running stock bottom, ls6 heads & intake, F14 cam, 6spd on pump gas, will trying to achieve 11:1 be ok, advice needed.

Here is a setup that we did and all the specs with good quench and achieved the 11.1 compression and no issue with valve to piston

The heads will be a 243 casting LS6 head that we will CNC port and open up to a 2.00"/1.60" Manley stainless steel valve with a three angle performance valve job and we will back cut the valves. We will size the guides for the proper clearance and set the installed heights and surface the heads to 62cc so you will have a 11:1 compression with your stock piston and the .045" Cometic head gaskets. If you piston sticks out of the hole .010" like most LS1 engines then this will give you a .035" quench height which will be perfect. The cam that we are using is an Extreme Energy grind from Comp Cams and it has a 230/236 Duration @ .050" and a .600"/.600" lift on a 112 LSA, this cam works great with these heads and I recommend checking the degree point noted on the cam card when installing the cam.
