Got the Eibach\Bilsteins In
Just got my car back today wit the lt1 prokit and bilstein shocks in it, I love the stance, but I heard the springs will settle and drop eventually after driving it, it seems a tad high still, is this true?

I didn't do the LT1 kit but I did install my LS1 Pro-kit a few weeks ago and the height is still the same now as it was the day I did it. I actually removed a half coil from the front spring because I didn't like the front being so high.

If there's a big enough difference in the weight between an LT1 and an LS1 to justify a company manufacturing a seperate set of springs, I'm not so sure you're going to get the results you're looking for, without going under the knife, of course...
My Moog Iroc Springs took a few drives to settle in, and it looked like a 4x4 right after installation. If you think the factory fender gap is hideous, you should have seen this thing, lol. Anyways I've driven on them for years now, and they haven't "sagged".
good luck!
