stock height and springs. Im wanting to put them on the stock wheels. Hoping to not have any rubbing issues. They are 26x11.5-17

Awfully wide for 8" wheels. They should have 9-10" wheels or the sidewalls will bulge out. Because of the bulging they'll rub for sure on the outsides and even with wider wheels would probably require a fender roll at least.

They will fit 17x8 rims. I have those tires on a pair of 17x8 rims for the 06 mustang I use to have but the mustang has bigger wheel wells and has rolled fenders. They should fit the 04-06 GTO if you have the fenders rolled and maybe some drag springs.

The problem is if too wide of a tire for the wheel is used it makes the tire bulge out. On our GTOs there isn't that much room on the outside. Besides the bulging also makes an uneven tread contact patch. You lose the reason for having a wider tire. Get the right tire/wheel combo.
Here's two tires of the same cross sectional width with one on a 8" wheel and one that I had widened to 9". You can see that the sides stick out farther on the 8" which will cause fitment issues and the tire won't lay down right.
