My 2000 SS' driver and passenger seats have a couple rips in them and I have replaced them with aftermarket seats. My question is what parts are still valuable on them? Just the rails? Anyone want the buy the set before I start taking them apart lol?

Easiest would be to sell as is , new owner could recover them.
I kept my stock seats & going back to stock just because racing seats are a lil annoying.

+1. I swapped my torn seats for racing seats, but later switched back because it's just more comfortable for my DD to have the stock seats.

Also, I will be recovering the seats some time this winter.

So I would say hold onto them for a while to make sure you won't later want to come back to stock after you recover them.

How torn are they and where are the tears? If it's only down the middle, then I'd say to just get the centers re-done and sell them that way. Maybe do something custom??
