I have C5 brakes on my Z28. Will these fit. What are the F-body offsets specifically? I want to compare to the wheels I am running right now.

yes they will work with your brakes.
I didn't measure them I just know that they are originally ordered for an fbdy. give John a call at CCW and he can give you the answers you looking for.
