Spark plugs unless it hasnt been too long since you changed yours. I would pick up and oil filter and oil just incase you have to remove your filter to get the headers in like i did.

I would get some new header gaskets, and if you wanted to install some poly motor mounts when you get the factory manifolds off would be the best time to do so. Other than that, looks like you got it covered.
Good luck.
Good luck.

1) GM metal gaskets if your headers don't come with any or come with paper.
2) spark plugs and wires if you haven't changed them before, and still a good idea if you have as I had a wire break removing them and it's possible to break a plug too.
3) new corvette o2s because you'll need extensions anyway and the old o2s will probably be a cast iron bitch to remove.
4) possibly o2 sims for the rear if not tuning them out; the lack of EGR and AIR (assuming race style headers since you mention blocking off EGR) will trip a SES anyway so you might not worry about it.
5) band clamps if your headers do not come with
6) if you want motor mounts, now is the time. They can help you keep the pipes tucked up with out banging.
7) sometimes you have to remove the oil filter to get the headers in, might as well consider an oil change or at least have a fresh filter and oil to top off.
8) wd40 for rusted bolts
That's what I can remember when I did headers on my `99.
