I'm going to be getting a set of Pacesetters soon and want to know what gaskets are recommended or prefered?

If they're still in decent shape, just re-use the stock metal gaskets. I've used the stockers on 3 header swaps and they seal just fine.

oem i used my stockers and have had them for anout 15000 miles and there still fine.
the paper ones that come with the pace kit are crap.

i bought the copper ones and they didnt work at all. go with OEM

I would not use the paper ones at all. The OEM ones you have now should be just fine when you remove them. They can be reused many times, and they are stainless steel.
