overheat question

overheat question
Today I took my 2001 z28 out for a spin....Well when i was driving i noticed it was running a lil over 210..........Well came to a straight stretch and hammered down on it to pass a car and i noticed that the temp went up after i slowed back down..........was between the 210 and the next mark....Took the car home let it sit with a/c on and it was about normal (lil over 210)......
Anybody know why the temp would go up like that after accelerating.....This is a new car for me and im not use to what temp it runs

with the stock cooling equipment it should hover around 210.. depends on how high above 210 its going .. and soposedly 2000 and on year f body's thermostats arent very accurate.

Honestly I havent checked anything ...I was just asking thinking there might be something that stood out with the car's symptoms...I will check here shortly on the coolant level...The car is a police interceptor and I believe it has a heavy duty rad...Is this correct

take out the thermostat and see if the guage changes at all... possibly faulty. the gauge could be the whole problem with this. so id look for a better means of finding actual temp also. and see if you are actually overheating.
