I'm sure there are numerous places to get a bar or cage done.
I had my Nova's custom bent at Dan Neumann Race Cars in Ocala. There's also Chassis Engineering in West Palm and I'm sure a few other chassis/drag race shops plus the sponsors on here.

The best choices in FL for well built chassis stuff is Dan Nuemann in Ocala or Tim Takash in Orlando. If you want a legal NHRA certified car it should be one of those 2. Or take it out of state to Madman.

Where is lake mary? If it is anwhere near largo, Race Related is the place to go. James does some of the best fabrication that I have ever seen.
