Your LS1 should be making somewhere around 300-330 BHP. A 100 shot will work fine as long as your fuel pump is up for the task. Spend the extra money and get a decent replacement pump because the factory pumps arn't the most reliable. The amount of traction you have will determine your ET, but expect between 115-118 MPH with a stock LS1 and a 100 shot. 12.9-13.6 is the range to expect from a stock LS1 (lots of variables determine ET) but a good stock MPH is around 105-107.

Is your car M6 or A4? If you're an M6 most guys usually go with 4.10's, A4's usually 3.73.
I don't know that much about NOS but I do know that generally if you're looking for 10's you don't want either a dry or wet setup you want a direct port setup... and that's gonna cost you some $$$'s. But if you're looking to reach 10's anyway you've got bigger problems than which nitrous setup you choose because the stock rearend is gonna give way before long.

If you have an A4 you are in less danger than if you had an M6. My car is stock so I can't speak from experience personally but from having spent inordinate amounts of time on this site (due to my not having a life ) and reading what others have said, the 10 bolt is probably okay with NON-sticky tires (no drag radials, certainly no slicks) up to probably around 450 hp, then things start getting hairy.
The weak point seems to be the differential cover. Aftermarket differential covers can be had for less than $200, that seems to help most people. Some have their cars in the 10's with just a built 10 bolt (mostly A4 guys), while others have broken their 10 bolt on their first pass stone stock. It's very touch and go. If you ultimately plan to build a 500+ hp car then you probably will just want to save time and get the 12 bolt now.

OK. Since you have a 1998 with the 28lb injectors, you could easily spray a 150 shot if your fuel system is in good shape and you get a decent tune. You will hear arguments for and against both types of nitrous kits. I spray a wet shot and have no complaints...
Honestly, if you are having a built driveline installed later, I would put a convertor behind it and spray the stock motor until it pops. I know a few guys spraying a 200shot on a relatively stock LS1 engine and they have been shocked at how much torture these motors can take...
