Default coolant temp sensor -40

Car has been extremely rich, scanned today and coolant temp was reading
-40. There was also a code for mass air flow and lean in bank 1, ses light was on but went off. Will this be the cause of my rich condition?

Look for a broken or disconnected ECT sensor. Very cold indicated
ECT will push enrichment in open loop and prevent you entering
closed loop.

The temp sensor is an aftermarket one from auto value, where should I check for a broken wire, we checked the connector for the sensor with an ohm meter and it seems o.k.
