There are a few colors they didn't make SSes in.
'96'-97 you could only get an SS in bright red, arctic white, black, sebring silver, polo green, and bright teal. You couldn't get one in any other color. Somebody was selling a '96 dark purple metallic SS on ebay a few years ago, and the pictures looked fairly legitimate, but the owner wouldn't show me any documentation proving it was a real SS. I didn't save the VIN # to check with SLP either.
Off the top of my head, the only colors you couldn't get on an SS from '98-'02 were... bright blue, bright purple, mystic teal, bright green. I don't believe you could get a monterey maroon SS either...
Gold SSes were indeed very rare. There's only 1 SS in mystic teal, and it was a test car for the SS program. It didn't get crushed, somebody owns it, but I can't remember who (off the top of my head again). It was a convertible.
