How are some of you guys installing a Gauge/Temp Sending Unit for this?

Is there a Kit?

I have found this and I can run the AN Lines...I have the two wire temp sensor..how is this wired?

What exactly are you trying to figure out how to do? Just wire an oil temp sensor?

the best way to do oil temp on the LS1 in an f-body, in my opinion from experience, is to buy an autometer adapter that will fit the oil pan drain plug hole. sorry, forget what size it was other than metric, but i got that to 1/4 npt since my temp sender for the cyberdyne gauge i used was 1/4npt. having the sender down in the pan there is not affected by exhaust heat. I had tapped removable piece above the oil filter and had the sender there initially but in the summer my gauge would read over 265° F idling because it's 2" from the catalytic converter, and I ended up going through 2 senders because the wire into it would melt.
that gasket in your link which has the circular holes outlined by black is the overall shape of the removable port above the oil filter and the existing gasket, so my guess is that lingenfelter part goes there. i would drill and tap the oil pan before buying that for $99.

Yes...how GM did it on the Vettes..but something tells me that is PCM related so is there and Aftermarket one that is accurate with a Gauge?

If you buy an aftermarket oil temp gauge, it will come with the sending unit. You just have to figure out how to adapt the sending unit to work with the engine. On an LS1 Vette, the sending unit was located on the piece above the oil filter. You can (or at least could) order that part from GM, and make it work for an aftermarket sending unit.

I ran an adapter like you show and also installed a Canton Racing oil temp thermostat as well. That means that I installed an oil cooler so it will bypass to the oil cooler once the oil temp goes above 215 degrees. Below 215 it flows like normal.
Here is a picture of my thermostat set up. I also put an oil pressure and temp gages in the dash of my GTO. In town driving here in Az. in stop and go traffic it get's pretty close to the 215 degrees. On the freeway it will drop down to 180 or less.
