its so the side bolsters can be adjusted but i think its more cosmetic than function since the hawks kit doesnt come with them (they were discontinued from GM years ago) and they just add extra leather there so the bolsters can still be used. i just wanted stock looking seats so i had mine sewn in. they cut the excess fabric off the sides and then sew the plastic in their place. the leather does not go around the back of the seat. it just stops at the end of the bolsters. the rear of the seat is covered by cloth that comes from the top and bottom of the top seat section of leather and meets in the middle and is hogringed together.
