Thanks for the compliments guys.
Glue should be fine. Top foam and vinyl is done with 3M General Trim adhesive. Edge wrap and vent area done with DAP Landau top contact cement. The vent is glued in with hot glue, which also helps keep the under side down.
Really any decent adhesive should work since you're not stretching it by any means. Your usual failures occur when the material is stretched and wants to return back to normal or gravity. I used regular DAP contact cement on the first stuff I did. It worked until the first car show with the top down and then failed where it was stretched around the a-pillars and molded to the back of the headrests.
Not wanting to do it three times, I wrapped a spare head rest back using the landau top contact cement and left it outside all summer. No failures. Still need to redo my other stuff, but I want to get the rest of the interior finished before I start fixing things.
For those that haven't seen my personal car, here's the build log:

Jesus man, page 3 is depressing. That had to be a difficult time.
Your car is beautiful. All the work you've done is very nice. You can tell you took your time.

I realize this is an older thread, but I wanna say thanks to all who have posted here, especially shr00m-dew.
I used your steps to cover the original Upper Dash Pad that cracked as a result of the accident my Formula was in.
The Vinyl around the Defrost Vent could be a little smoother, but it may work itself out when I finally get the car back on the road and out in the sun.
Any how here are some shots...
Here is the Dash after repairing the broken piece with some Plastic Weld Glue and a Cocoa Puffs Box.

I couldn't find the Vinyl in any color but Black so here is my setup to paint it with SEM 15303 Graphite Vinyl and Plastic Dye. Its not a perfect match, but its really @#$%ing close.

I chose to add some Upholstery Foam in hopes that it would allow some forgiveness when wrapping the vinyl.

Here's the Vinyl being glued in place. You can see a few air bubbles that had me concerned, so I wrapped a couple pieces of 2x4s in towels and placed them on it to hold the vinyl down and they came out fine.

Wrapping the Vinyl. The clothes pins worked really well to hold everything in place, but kind of squished the foam and left the edges uneven. It seems to be bouncing back though.

Here is the Vent Grille mocked in place. I cut the Security Light Bracket from the original grille and mounted it to the new one then opened up one of the holes to accommodate the bulb. This was only a mock up as well in this pic.

I have more pics that I need to upload, but here is a wide shot of the whole thing.

I'll get some finished photos posted once I have them uploaded. I was hoping the link would show the photos, but I guess not. I was using photobucket until they recently decided to extort everyone, so I switched to Google photos and don't quite have it figured out. Anyways, thanks again to all.
