Wrapping Dash in leather. Stitching question

I will be buying a 98 trans am dash tomorrow. The plan is to wrap it in vinyl(leather fabric type). Then install it in my 91 Camaro.
I've got experience using this vinyl, but have no experience stitching. So my question is;
1. Would I be able to cut a piece of vinyl that fits on the left side. Then cut a piece that fits the right. Then take it somewhere and have them stitch the two pieces together where the red line is? I would think no, because of the contour of the dash.

2. Would I be able to cut the dash on the red line. So that the left and right sides are individual pieces. Then wrap the left and right side individually. Then bolt them back together by making brackets that attach underneath the dash somehow.

Please only reply if you have some type of upholstery experience.

You could make patterns yourself, and just run them through a sewing machine to create the holes needed to lace them together. If you don't want a ridge where the seam is, then clearance a small groove in the dash where you want the seam to be, to allow it to tuck into and lay flat. I am sure there are plenty of videos on YouTube of french seaming, etc... Good luck and share pics!

Its easier that you think I took one class at joann's that was it from their its a lot of fun. I'm working on seats right now. French seams for sure very beautiful and quality look. My first project was my door panels and other little stuff in the car.

If you have a sewing machine do a few practice runs then try it.

If your going to do vinyl make sure its a 360 stretch its much easier to use with those kinds of curves especially for your first project. Use the 3m strength 90 spray glue it has worked the best for me. You can get it at home depot.
