do i have to take my calipers off to paint them
Is it a hard job taking them off ,or can I just leave them on and tape them off?

Might not have to take them off entirely, but I would disconnect them from the rotor/mounting and leave the brake line in.

I did my old camaro like this: (I left the caliper on)
Once the tire is off, get the 1/4 inch or smaller tape, like masking tape. Take a bunch of newspaper, and put it over everything inside the wheel well (springs, rotor). Tape off the area of the caliper you want to paint. You don't need to buy any fancy or expensive spray paint, or any special applicator. I used high temperature spray paint from Pepboys and it lasted over a year with no fading, chipping, anything. You need 3 cans of paint: 1 can of clear coat to keep the paint in top notch condition and from fading/chipping. 1 can of the color you want to paint the calipers and 1 can of a primer, preferably black or white (the white will make your color stand out more, thats why you first spray it white, then your color ontop of it.) Once the primer dries, then spray your real color over that. It's best to do 2 coats to make it last longer and hold up. Then if you want, put on Camaro or Trans Am decals on them to make them stand out even more. If you want, while your under there, you can spray paint the plastic wheel well black to make it nice and shiny again, spay paint your shocks (mine are the original ugly orange) or anything else you want. Get some valve stem caps for your wheels, like the pontiac logo, WS6, or the chevy logo and your wheels/wheel well/brakes will look amazing. Good luck and have fun, it's not to hard this way and it look sgreat!

Just take the calipers off. There are only two bolts holding each caliper on. Take those bolts out and the caliper comes right off. Then just hang the caliper off to the side of the roter using some wire, you don't even have to disconnect the brake lines. Next just brush on some duplicolor paint and it will turn out great and you don't even need to mask anything off at all...its just two bolts...can't get much easier or faster than that.
