Can you Over-polish your car, would it course the paint to fade, and what do you guys think is the best polish out there?

Most polishes contain abrasives, so yes, you could potentially remove or severely thin your clearcoat. It also depends on the method of application such as by hand, orbital, or rotary buffer.
Menernza applied with a Portercable orbital buffer is a popular choice. Make sure you wash, claybar, polish, then wax.
Unless your clearcoat shows swirl marks, it is probably not necessary to use an abrasive polish and a system such as Zaino would suffice.

Safe, user friendly machines such as the Porter Cable, UDM or Flex make it impossible to burn through the clear coat even on edges and ridges. Micro-marring can occur which clouds or hazes the clear coat when using a too strong chemical abrasive, pad or insufficient moisture when buffing. This is correctable.
Use the least aggressive methods of correction as needed. In regards to applying non-abrasive sealants or waxes, these can applied regularly without inflicting long term damage.
