Most serious racers use a t-brake and a 2 step. You typically won't get the best 60' launching with the converter against full stall.

Typically you would set a 2 step for say 3000 rpm with a 4000 stall.
It varies by combo but you tune the two step in for best launch.
You get more shock to the tires when you "run up" against the converter.

I have a built 80e with Tbrake. My tuner had to disable the knock sensors. I made 450whp and 480 torque on a mustang dyno @15 psi stock 4.8l with a on3 88m turbo. 2nd gear hits hard!!!.
