The only options on my '98 Z28 are the CD player and rear defrost (which doesn't work anyway). The only thing I wish I had was the hatch release.

If you really wanted to keep it simple why bother with an electronically controlled car like an LS1 car would be? Go with a 60's or 70's car and call it a day. There, you can go with drum brakes, seats that suck, no power anything, 15" wheels, 3 speed transmissions, no safety equipment, etc.
