Not a true 2-seater but a 240sx may as well be a 2-seater. I am starting my journey into the 240sx-V8 world now and everything seems rather straight forward and feasible.

Add one vote for the Amigo. I have an amigo that is in great shape, just way underpowered, and I'm seriously concidering the swap sometime in the future. Just have 2-3 projects already lined up at this time.
