LM7 into 59 Chevy Pickup problems
If you still have access to the truck, might try mashing the throttle with brakes applied.
BTW, I've had 2 incidences of stuck throttle, frayed accelerator cable (obviously not your issue), and a foreign object jammed in a carb butterfly.

One thing that comes to mind is do you have floor mats in the truck?
Just a theory but maybe a floor mat got jammed between the pedal and your foot.
Again this is just a theory for your scenario but hear me out... you make your turn and shift your feet a bit. This shifting causes the floor mat to be moved out of it's proper position. You go for the brake but the out of position floor mat is now unexpectedly on top of the throttle pedal being pressed down by the brake. The harder you push trying to stop the harder you're unknowingly pressing the throttle. Since most V8 engines have far more torque than braking capacity and any LSx engine easily fits that category, despite your best efforts the truck takes off in the direction the front wheels are pointed with you along for the ride.
This is why I said earlier as a future note to always cut power and / or put the car in neutral. This is a learned and not the default response but it works.
Let me ask a question, as several of you know way much than I about the lsx stuff, how does the throttle know how brake is set if you are not using ABS or such on a conversion lsx setup? Is there something else that tells ecm brake is set?
