I'm guessing a nice BUT powerful cruiser.
You WANT displacement, since you're keeping it mild and naturally aspirated.
I would source a 6.2 out of a truck since there are more of them than Camaros or Vettes.
An L92 or L94 are what you want, and usually came in Yukons, Escalades, and some GMC pickups.
Stock, they put out 403 HP. A decent cam like a 212/218 with about .550 lift will pump it up about 30-40 HP.
Not sure you can find headers for this combo but if you do, another 15-20 HP.
Tuning will bring it all together.
The L99 is a 6.2 aluminum block that has both VVT and AFM/DOD (Active Fuel Management/ Displacement On Demand)
To delete those will need a new cam. A chop sounds cool, but cams like that have far less low-end power. NOT a good idea with heavy cars
