What PSI radiator cap do I need to run with my conversion.
Car runs a new alloy cross flow radiator with just a overflow hose, there is no header tank like the late model cars, do I run a cap to suit my radiator or to suit the LS1 engines requirements?

NAPA or O'Reilly can probably get an OEM or equivalent for reasonable cost. I used NAPA for my last two radiators for the truck and another car and was happy with the OEM part and excellent fit.
Almost 20 years and no issues with the factory radiator in the 99TA. Some of that is probably luck of th draw and coolant flushes even 4 years. Friend with 00 FireHawk same experience. However, his other Trans Am & WS6 with LT1 radiators had many issues with the plastic side tanks cracking and leaking or tabs breaking and the side tank leaking.

I have a cheap generic "GM style muscle car aluminium radiator" and a standard 18 psi cap. Works fine, third season now. Even this season with lovely 90+ degree weather here in Sweden. Just leave a couple of inches of air in the top of the radiator for expansion. Stock Corvette thermostat. Roomy engine bay, though (gm a-body).
