I've thought a lot about cars I will one-day build, but I don't give much thought to the engines as some variant of the lsx frequently comes to mind. That being said, in the 04 or 05 Gumball Rally, there was an old VW camper van with newer Porsche suspension and drivetrain components, as well as a Porsche engine. I'd love a 997 GT2 derived VW van. More recently I've also thought about a diesel swap into a 99-04 Flareside F150 Lightning clone, perhaps a Duramax/ 6 speed Allison running biodiesel.

I'll take the Hemi out of my truck, and the rear end out of the vette, and put them in the 944.
Even though the LS1 would be a better platform, nothing stirs the crowd like a Hemi.

I always thought that an old VW bus that was chopped and lowered, backed by substantial suspension components to handle in the twisties and finally topped with a twin turbo LS1 with a six speed would be absolutely amazing.
Also:
a '65 Malibu two-door wagon with a turbo v6 from a Grand National

although I'll probably get a lot of hate for this: a 2jztt + 6 speed Getrag from a Supra dropped into a Tacoma or similar Toyota mini truck.

Lastly:

E30 M3 BMW with a turbo s52 (engine from 99+ m3)

1. black '69 stingray w/polished sidepipes swapped with turbo LS7

2. mabye a hardtop BMW Z4 with some sort of LSX motor in it, not sure how possible that would be, but definaltey a change from the normal Z4's around the upstate of SC

ok seriously ..hmm what about a tuned GN (Buick grand national) motor in a miata or a 98-02 camaro or trans-am..i kinda dream about having a GN motor in my car stripping the z28 badges..lol mwahahaha..ehh or just get the motor out of the ultimate areo would work as well heh.

TT 454 LSx in a 84-88 Toyota pickup, 2wd, reg cab, lightweight.

Same motor in a 1990 300zx.

Same motor in a 1955 Caddy rag top.

BBC with a huge blower and scoop sticking out the hood in a 1968 Caddy hearse. Full drag car that would do wheel stands and run 8's. Would scare little kids and give the elderly heart attacks.

The list goes on and on, those are just the most doable.
