What should a stock 2002 FireHawk Dyno?
1st dyno sheet is bone stock 13,800 miles and the second one is not.

Is this a safe assumption or is that too high

There is always variation, but the 345 hp option is a joke. All of them make 345 hp. I'd say some of the fully optioned models make 360+ with the numbers they actually put down.
Um Dude, the SLP Donaldson Lid and SLP Dual/Dual catback were standard on ALL Firehawks in 2002. Some of the earlier Hawks build ~150 and before were built before the Lids were finished and were sent to the owners after delivery. As for the SSs they come in either the SLP version or the GM Factory version. If the SS was an SLP version it follows the same rules as the 2002 Firehawks.
As for performance it's saved me the need to buy a lid & catback, but also gave me tons of other great options like the bilstien suspension (see sig).

THey are standard on the Firehawks. I have heard of instances where some jerk took a Trans am or formula and put FireHawk stickers on it and tried to sell it as a Hawk.
I'm just giving you a hard time. It's still a Firehawk and looks badass.
On the other hand, I did only pay $19,300 for my Z28 and it's doing quite fine.
The dual dual exhaust is very restrictive compared to other aftermarket exhausts out there.A cutout could give up to 15hp on a stock Hawk.
