I wish I could help with most of that. For the most part I don't deal much with boost so I don't have an intelligent answer. The chart just looks like valve float in the NA world.
I doubt the clutch slipping would affect boost that much, since your turbos are really only dependent on RPM and airflow, right?

rate of change of rpm affects boost pressure building. if you want to see the slowest spool you run in 1st gear. If you want the maximum torque at the earliest RPM (most boost at lowest rpm) you run in final gear.
There are performance implications and many "sayings" that follow, like "turbos like load" and "turbos like numerically low rear gearing" etc... it is because when you reduce the rear gear # it is like running in a higher transmission gear (like fourth instead of third), so you see more torque (boost) sooner because rate of change of rpm decreases.
