Shawn@VS is dead on. You probably cracked the liner - especially on an LS7.
16 degrees might be fine on the dyno with very little load and predictable IAT's. Running a car through several gears up to 180mph is a LOT more heat and will detonate if timing does not compensate.
Do you have a copy of the tune? Post it up and I can show you what, if anything is not setup correctly.

Starting in 08 GM can tell if the calibration in the PCM is oem and they can tell the number of times the PCM has been flashed. Also it is required that the tech sends a picture of all the calibration Data into GM for approval before starting any work on a major engine repair on ANY gas engine v8
