Default 5.3 or 6.0 for my 60m Garrett twin turbo kit?

I have a 5 seat long travel sandrail with a LS7 (cam only). The LS7 is coming out for a refresh so I thought it would be fun to try a different combo for this season. I have a twin turbo set up that came off a different sand rail. It is a complete hot side with twin Garrett 60's. The PO had it on a 376ci LS engine and made 750 crank hp on race gas. I have a small IC for it that mounts above the intake manifold w an air scoop. My son is a fabricator and will be making me the cold side. Since I am not sure if I will like a turbo set up in the sand and may go back to my NA LS7 I'd like to use a JY long block. I have the funds and ability to swap the valve springs, cam, injectors etc. I am not sure what junkyard engine to go with. I'd like to max out the potential of these turbos if possible on pump gas or E85. These are my choices and the going prices for JY long blocks with 90-110k miles:

5.3 alum block = $1,500-2,000
5.3 iron block = $500-800
5.7 LS1 (100-150k miles) = $1,500
6.0 iron block = $1,300-2,000

My first instinct was to go with a iron block 5.3. Then get a turbo friendly cam/springs, injectors, head studs/mls gaskets. Open the ring gap, install ARP rod bolts. Big injectors (not sure what will be necessary) and a professional tune. This seems to be the lowest price option that would let me see if I like the twins in the sand and still be much faster than my cam only LS7.

Iron 5.3, save your ls7, it will make more power with less backpressure

I bought the turbo kit from a guy who moved up to a lsx 454 and they were too small. My plan is to have my LS7 refreshed and put it on the shelf in case I don't like the turbo combo in the sand.
