whats gears come in the 00 ss camaro conv. form the factory

If its an a4-3.23s, m6-3.42s.

what would be a good set of gears to swap, i want to be quick on the street but want to be able to run a decent rpm at hwy spds

Honestly, after having an a4 previously, you will be quite happy just keeping those 3.23s and throwing in a 3500 stall and trans-cooler. Alot of people keep those gears, they work rather well. If your dead set on swapping, you won't want any higher than 3.73s in an auto.
