I put 87 in my daily driven 07' Silverado Classic with a flex fuel capable 5.3, and 91/93 in my LQ4 swapped Malibu. You probably aren't going to do any damage on an LS1 by using 87. As long as you stick to a legit gas station and don't go buying gas sold at Wal-Mart and Marathons, you really shouldn't have an issue.
Considering stock LS1 compression is 10.1:1, and LM7 is 9.45:1, I really doubt the half point would negate using 87 in an F-body.
But like said above if your car was tuned or modded, the higher is probably your best bet.

You can do it, but I would keep in mind that you may end up having at least a slight loss in both performance and gas mileage. I only run 93 in mines personally, the car never got a tank of 87 or 91, under my ownership at least.

Would regular gas be causing crappy performance with a timing controller? I dumbed it down 4 degrees total and I have been putting regular gas in the car. Could this cause a slapping noise when I first turn the car on?

I agree with others, if you cannot afford that little bit extra for 91 or 93, you are in the wrong hobby.
Eat one less meal out a week, one less cup of coffee, do you really need that fancy smart phone? Cut back 1 pack of cigs a week, smoke a little less weed, etc. you get the picture.
I would park my car before putting 87 in it. When gas was up, I would run 2 6.0 plow trucks and each night of plowing I would spend over $125 just in gas, and that was just a normal storm. Gotta pay to play

Lol. Sorry if that came out a little rude. What I mean is that basically everyone has something that they can cut back on just a bit to pay for other things. When you calculate how much more you pay per tank of gas for higher grade, it's really not much. I see money thrown away all the time. When I was on my rounds at work when scrap was high, I always pulled metal and put that free money towards tools and parts, same with other things. Also with parts, I see good prices I pick them up and flip them and use that profit for parts and tools. If anyone looks hard, there is money everywhere.

lower prices, spending more
Last night I paid $2.13 for 89 octane at Walmart. A nearby Valero charges more, but their gas is rated Tier 3. Does anyone pay more for the better additives?

I avoid 87 at all costs with my 99TA, the car will ping on 92 octane gas a lot of the time in the summer if its hot at light throttle on the interstate. The car will also ping on 93 on the interstate at light throttle if it's hot AND dry if the TR55's plugs aren't fresh. The old MTI mail order tune is pretty good but the timing is a hair too aggressive at light throttle. My TEA 5.3 ended up at about ~ 10.8 compression they had been previously decked about .030
The 72 vette is carb'd and the engine builder said use 93 with the 10.85 compression because it's close to the limit with the cam selected. Back in Carolina where I lived was around 750 feet above sea level never had any issues.
Now in hot dry weather a gallon of C16 per fill up is needed to avoid a little ping in Terre Haute IN highway driving which is around 500 foot above sea level.
91 RS with 383 LS1 is 11.3 compression and always gets 93.
I try to buy ethanol free 93 when possible.
87 is OK for the Tundra and 91 Camaro with the 305 TBI

I was involved in the building of 2 Valero Refineries, they run a FIRST Class operation and make some of the best fuel in the business. If you sit and watch they sell fuel to lots of other refiners ,FWIW Valero started of as Diamond Shamrock and Sigmore Shamrock.
