I saw some 8 Series in England last time we were stationed there and I did not like them.
Go for the C6 if the wife will let you have a cool fam car anyway.

C6 Z51.
If you can't get the Z51 then I would definitely go with the C5 Z06.
The others are more DD type cars, and the 850CSi, I doubt you could find one, and if you did, it would be crazy expensive - and if you have to fix it, well, just lol.

go with either the c5 z06 or the c6, make sure its electron blue the best color ever made IMO, the others seem more like DD's to me you would enjoy a vette more for the weekend.

Out of your list I'd pick a C6 Vette. Make sure you go LS3, Ive read alot about how much better it is than the LS2. I guess It may have different torque and power bands due to the re-vamped cylinder heads??
Another car you may look into if your considering staying GM is the new Pontiac G8 GT, 360+ HP on 87 Octane, 4 doors, spacious RWD Car for around 30k!

Well, when I do end up buying this car, I'm trying to keep my monthly payments around $500. I will be more than likely selling my TA instead of trading it in so I can make a little more for it, and hopefully should have some extra money saved on the side. So, I think I'll be looking at a sale price of around $30,000-$34,000 when I can actually buy one of these. One the other hand, I think we're buying a 300C within a year for the wife

I was looking mainly on ebay for the 8-Series. There is usually a decent amount of them on there, and plenty of pretty pictures for me to see. I just don't know about buying a car off of there. I will probably end up heading to Texas to a Corvette dealership whenever it is that time

I personally have never really liked the Cobras. I respect them, I know of their potential, and their sound really is amazing, but I don't like the interior at all. I'm mostly looking for a car that I can show off to the neighbors (We're probably the youngest couple in our subdivision, so I feel like we have a little catch-up to play), and just enjoy taking care of and going for joy rides on the weekend with my wife. I'm probably going to get something along the lines of a 3rd gen Z28 or TA as a daily driver, and drive this car only a few thousand miles a year
